1 small onion diced
3 celery stalks diced
3 cloves of garlic
2 big carrots diced
1 lb cooked chicken, cubed
4 cups chicken broth
1 package mini potato gnocchi
6 oz baby spinach
1 tbsp cornstarch
2 tbsp cold water
2 cups half n half
salt and pepper

Heat olive oil and cook onion, celery, garlic and carrots until tender. Stir in cubed chicken and chicken broth; bring to a simmer. Stir in gnocchi until simmering. Cook until they begin to float. Stir in spinach; cook until wilted. Whisk cornstarch into cold water until smooth. Stir in cornstarch mixture and half n half into simmering soup. Cook until soup thickens slightly. salt and pepper
