4 cups Old Fashioned Rolled Oats
1 ½ cups raw nuts and seeds
½ tsp cinnamon
½ cup melted coconut oil or olive oil
½ cup maple syrup or honey
1 tsp vanilla
⅔ cup dried fruit
½ cup optional additional mix ins: chocolate chips or coconut flakes

Preheat oven to 350* degrees.
Line a cookie sheet with parchment paper
Combine oats, nuts, seeds and cinnamon
Pour in oil, honey, and vanilla. Mix well until every oat and nut are lightly coated. Pour the granola onto your prepared pan and spread it into an even layer.
Bake until golden brown about 21-24 minutes. Stir halfway through and press down to an even layer
Let the granola completely cool (about 45 minutes)
Break granola into pieces. Store in airtight container for 2 weeks.
