Maggiano’s Fried Zucchini Batter

 2 cups seasoned flour
 2 cups corn starch
 panko bread crumbs
 2 ½ cups soda water
 zucchini

Pour soda water into stainless steel mixing bowl. Combine seasoned flour with cornstarch 1 cup at a time. Don't over mix.

PREP
Cut zucchini lengthwise. Dip each slice in batter and let it briefly drip off zucchini. Sprinkle with panko breadcrumbs. Lay on parchment paper and don't overlap. Fry until crispy brown. Sprinkle with salt and Parmesan cheese.
