Put hamhock in a pot and fill with water. Add onion, carrots, bay leaves and tsp of pepper. Turn the pot on medium heat. Clean your beans and add to the pot. Turn heat to high and bring to boil. Continue to cook until your beans are tender. Peel the meat apart; stir together. Takes a few hours.
