Hailey’s Spanish Rice

 1 cup rice
 rotel
 olive oil
 adobo spice
 cut up carrots

Put a cup of rice in a pan with a lid. Drizzle it with oil and then saute the rice for a few minutes. It changes color, but you don't want it to get too brown. Use adobo spice. Then add carrots and add 2 cups of liquid. Usually 1 cup of tomato and the rest water, as long as it's 2 cups of water. Bring it to a boil and put on a lid, lower heat, and simmer until done; about 20 minutes or so. Don't take the lid off. Just spin to check on it. The rice gets little circles on top when it's done. Then take the lid off for a few minutes and fluff with a fork; but don't stir.
